What’s it About?

Spaghetti Bolognese doesn’t really exist in Italy. What the British call ‘Bolognese Sauce’ would be a ‘Ragu’ back in Bologna. And yet, ask most people in the UK and Spaghetti Bolognese or ‘Spag Bol’ (to use the technical term), would be one of, if not, their favourite ‘Italian’ meal.

And so, in recognition of the love the Brits have developed for Spaghetti Bolognese, Filippo Berio wanted to find out more and celebrate this iconic dish. Understanding how the recipe has evolved while helping our British friends to create the best possible Bolognese… or is it Ragu?! Effortlessly.

So, this is why Filippo Berio created the first National Spaghetti Bolognese Day (22nd May), backed by our own major consumer research study, a must-be-seen-at event, delicious food… and some secret ingredients too!

The Research

We asked 2,000 members of the Great British public to share their ultimate ‘Spag Bol’ tips and tricks, revealing fascinating insights, regional variations, and some surprising twists.

  • Moving away from the tried and tested classic recipe of beef mince, plum Italian tomatoes, and oregano, our poll revealed Britons are becoming experimental when cooking ‘Spag Bol’.
  • Of the top ten voted ‘secret ingredients’ nearly 20% of those cooking included Worcester sauce, 15% fresh chilli and 14% dabbled with tomato ketchup.
  • Spaghetti Bolognese mavericks were also seen to add gravy (7%), sweetcorn (6%) and cream (6%) – with open responses revealing some opted for crayfish, orange juice as their secret ingredients.
  • Gen Z and younger millennials were among the most experimental when it came to playing with the dish, adding Asian ingredients such as soy and turmeric into the mix.
  • Other innovations that would raise an Italian eyebrow, included 40% opting for cheddar cheese instead of parmesan, and 40% choosing pork or turkey mince instead of beef. Italian Ragu traditionally uses a mix of two types of mince, normally pork and beef.
  • Of those surveyed one in five believed Spaghetti Bolognese was better without spaghetti – with 20% opting for penne and 10% opting for macaroni.
  • But it was ‘how’ we eat Spaghetti Bolognese which left us generationally divided, Filippo Berio found just 31% of people twirled their spaghetti using a fork and spoon, with one in five chopping up their pasta.
