Zucca al Forno

Serves: 6
Preparation time: 10 minutes
Cooking time: 40 minutes

Ingredients:

  • 1 butternut squash
  • 4 tablespoons of olive oil
  • 3 teaspoons dried oregano
  • Cracked black pepper 1 teaspoon
  • Course salt
  • 1 red chilli
  • 3 garlic cloves crushed peeled then quartered

Method:

  1. Cut the squash into two halves and remove the seeds.
  2. Cut into Chucky chip style chunks and place into a mixing bowl.
  3. Cover with olive oil and coat.
  4. Sprinkle over the dry mix and coat.
  1. Add only a deep baking try making sure they aren’t on top of each other.
  2. Add the crushed quartered garlic cloves.
  3. Cover with foil and bake on 200c for 40 mins.
