Tagliolini with truffle pesto

This classic pasta dish from Piemonte perfectly embodies the flavours of the region. The combination of the parmesan and truffle creates a mouth-watering sauce which is rich in flavour. The tagliolini are the perfect pasta shape for this sauce, as each strand is coated evenly without being drowned by it.

Ingredients

  • 500g pack tagliolini
  • 2-3 heaped tsp Filippo Berio Truffle Pesto
  • 50g parmesan, shaved or grated

Method

  1. Boil the tagliolini in a large pan according to pack instructions with salt. Drain well, then return to the pan and mix in the Filippo Berio pesto.
  2. Toss well, then tip into a serving bowl and sprinkle with Parmesan.
