
Steak with creamy mushroom and truffle sauce

Ingredients
- 2 sirloin steaks
- 2 tbsp Filippo Berio Extra Virgin Olive Oil
- 5 tbsp double cream
- 3 tsp parsley, chopped
- 2 heaped tsp Filippo Berio Truffle Pesto
- 8 mushrooms, sliced
- 1 tbsp butter
- Salt and Pepper
Method
- Pat the steaks dry, season with salt and pepper on both sides.
- Preheat oven to 220C.
- Heat 1 tbsp Filippo Berio Extra Virgin Olive Oil in a large skillet over medium-high heat. Add the steaks and sear on both sides, about a minute on each.
- Transfer steak to a foil-lined baking sheet, seared side up. Spread about 1 teaspoon of truffle pesto on each steak.
- Transfer to the oven and bake for about 8 minutes for medium.
- Return the skillet to a medium heat. Add the Filippo Berio Extra virgin Olive Oil and fry the mushrooms until browned. Add the cream and cook, stirring until thickened, 2-3 minutes. Remove from heat, season with salt and pepper, stir in the butter.
- Plate up the steaks and top with the sauce, served here with polenta chips
