Orzo Pasta with Prawns

Serves: 4
Preparation time: 10 minutes
Cooking time: 10 minutes

Ingredients:

  • 225g orzo pasta
  • 3 tbsp + 1/2 tsp Filippo Berio Classico Olive Oil, divided
  • 3 cloves garlic, minced
  • 500g small shell on prawns, shelled and deveined
  • 1 1/2 tomatoes, chopped
  • 2 tbsp chopped fresh coriander
  • 2 tbsp chopped fresh parsley
  • Juice of 1 lemon
  • 50g feta cheese, crumbled
  • Salt and freshly ground pepper

Method:

  1. Cook pasta according to package directions until al dente. Drain and toss with 1/2 tsp olive oil; set aside.
  2. Heat remaining olive oil in large skillet over medium heat until hot. Add garlic; cook, stirring, for 2 to 3 minutes or until golden. Add prawns; cook, stirring, for 3 to 5 minutes or just until prawns are opaque (do not overcook).
  1. Stir in pasta. Add tomatoes, coriander, parsley and lemon juice. Sprinkle with feta cheese. Season with salt and pepper to taste.
