New Potato Wedges with Hazelnut and Red Pepper Relish

Enjoy these flavoursome new potato wedges as a snack, or as a side dish alongside salads or burgers.

  • 450g new potatoes
  • 2 tbsp Filippo Berio Olive Oil
  • ½ tsp salt
  • 1 tsp paprika


  • 1 red pepper
  • 50g shelled hazelnuts
  • 1 small clove garlic, crushed
  • 2 medium tomatoes, seeded and roughly chopped
  • 1 tbsp tomato puree
  • 1 tbsp balsamic or red wine vinegar
  • 90ml Filippo Berio Extra Virgin Olive Oi

To serve

  • Mayonnaise
  • Italian black olives


  1. Place the red pepper on a grill rack, place the hazelnuts in a small roasting tin and stand on the rack, then place under the grill.
  2. Remove the hazelnuts when they are golden and set aside to cool, whilst continuing to grill the pepper until blackened all over. Remove and cool.
  3. While the pepper is grilling, heat the oven to 200°C/400°F/Gas Mark 6. Cook the potatoes in lightly salted water for 5 minutes. Drain, then cut into wedges and toss in a tablespoon of the Olive Oil. Mix the salt and paprika together, then dust the potato wedges. Place in the oven to cook for 20-25 minutes until golden.
  4. Peel the skin off the pepper and remove the stalk and seeds. Roughly chop.
  5. Put the hazelnuts into a food processor and chop finely. Add the garlic, red pepper, tomatoes, purée and vinegar and process until finely chopped. While the machine is running, pour in the Extra Virgin Olive Oil. Season if needed and then spoon into a serving bowl.
  6. Serve the potatoes in a bowl with the relish, some mayonnaise and olives if desired.

Cooks tips

Left-over relish can be used as a spread on bruschetta or crostini then topped with thin strips of roasted peppers or halved cherry tomatoes drizzled with a little Extra Virgin Olive Oil.
