Marinated Prawns

Spice up your picnic with these succulent marinated prawns. Prawns are low in calories and are a great base for flavour, so don’t skimp on the marinade! Pack in individual salad pots or on skewers – because you won’t want to share these!

Ingredients

  • 400g cooked peeled prawns

For the marinade

  • 4 tbsp Filippo Berio Extra Virgin Olive Oil
  • 2 cloves garlic, crushed
  • ½ red chilli, deseeded and finely chopped
  • 2 tbsp lemon juice
  • 4 tbsp freshly chopped flat-leaf parsley
  • Salt and freshly ground black pepper

Method

  1. Place all the ingredients for the marinade in a large bowl and mix well. Stir in the prawns, cover and leave to marinate in the fridge, for 2-3 hours or overnight
  2. For jar salads, layer up a jar with salad leaves, or grains, a selection of griddled vegetables of your choice and pile the prawns on top, drizzling with the marinade. Serve immediately
  3. For prawn skewers, thread the prawns onto wooden skewers
