Garlic Potatoes

These quick and easy to make garlic potatoes are the perfect condiment to any meat or fish dish, providing an intensely rich dose of flavor which will leave you wanting more!

  • 575g waxy potatoes, scrubbed well
  • 7 tbsp Filippo Berio Mild & Light Olive Oil
  • 2 large peeled cloves garlic
  • 3-4 sprigs fresh rosemary
  • 25g butter
  • Rock salt, to taste


  1. Cut the potatoes into even, bite-sized wedges. Rinse and dry well.
  2. Heat the Mild & Light Olive Oil in a heavy-based pan until just starting to smoke. Add the potatoes and optional garlic.
  3. Reduce the heat and fry the wedges until browned on all sides. Add the herbs, cover the pan with a lid and cook for 15 minutes or until the wedges are cooked.
  4. Remove the lid and allow the water to evaporate then add the butter, tossing the pan gently. Sprinkle with salt just before serving.

Cooks tips

Add some extra spice by sprinkling a little chilli pepper over the wedges just before serving.
