Flavoured Olive Oil Mayonnaise

Try making your own mayonnaise at home. It is easy and you know exactly what is going into it, quality and fresh ingredients! You can now add an instant splash of flavour, by using our variety of flavoured oils!

  • 2 egg yolks - at room temperature
  • 100mls Filippo Berio light olive oil
  • 2 tsp of vinegar or juice of 1⁄2 lemon
  • 1 tsp mustard
  • Dash of salt


  1. Ensure the egg yolks are at room temperature before making the mayonnaise.
  2. Add the egg yolks, salt, mustard and vinegar in a food processor and blend until combined.
  3. Once combined, add in the olive oil VERY slowly. You want a thin and slow moving stream of olive oil almost trickling into the processor (otherwise the mayonnaise can separate).
  4. Add all the olive oil until combined to its desired consistency.
  5. Store in a clean glass jar in the fridge.

Cooks tips

You can also use an electric whisk to make this recipe instead of a food processor.
