Courgette Ribbon Salad

  • 3 medium courgettes, rinsed
  • 3 tablespoons Filippo Berio Organic Extra Virgin Olive Oil
  • 2 tablespoons cider vinegar
  • 1 tablespoon chopped fresh dill weed
  • Salt and freshly ground black pepper
  • 2 tablespoons crumbled feta cheese (optional)


  1. Using a vegetable peeler or mandolin slicer, cut the courgettes lengthwise into thin ribbons.
  2. In a medium bowl, beat the Filippo Berio Organic Olive Oil, vinegar, dill with whisk until well blended.
  3. Stir in salt and pepper to taste.
  4. Add the courgette ribbons and toss gently to coat.
  5. Let everything stand for 10 minutes.
  6. op with feta cheese to serve (optional) and drizzle with a little more Filippo Berio Organic Olive Oil.
