Ingredients

  • 200g spaghetti pasta
  • 1 jar of Filippo Berio Verdure Grigliate pasta sauce
  • 1 large aubergine
  • Filippo Berio Extra Virgin Olive Oil
  • 3 garlic cloves, chopped
  • Fresh basil
  • Salt and pepper
  • Grated Parmesan to serve

Method

  1. Cut the aubergine into bitesize cubes, coat it with olive oil, salt and pepper, pan fry or roast in an oven (220c for 30 minutes) until its charred outside and tender inside.
  2. Cook the pasta in salted water according to the package instruction.
  3. Meanwhile in a large pan, fry some garlic with olive oil, heat gently so you don’t burn the garlic.
  4. Pour in the pasta sauce and heat through. Then add the roasted aubergine, and tear in some fresh basil leaves.
  5. Stir in the cooked pasta, add some pasta water if the sauce is a little dry. Mix well and serve with grated parmesan cheese on top.
