We’re delighted to see our good friend and acclaimed chef, Francesco Mazzei, opening the doors of his new restaurant, Sartoria, in Mayfair, London. Francesco is a busy man, as well as overseeing the launch he has written his first book, Mezzogiorno: Recipes from Southern Italy.
Francesco, hailed by many as the finest Italian chef in London, has worked in restaurants all over the world, yet it is the cuisine of his home region of Calabria that he values above all others. Mezzogiorno: Recipes from Southern Italy is his celebration of the southern Italians unique approach cooking.
Mezzogiorno means mid-day, lunchtime, and it’s also the name of the poorest part of Italy. So the recipes focus on cucina povera, meaning the cooking of the poor, with beautiful, simple meals based on traditional southern dishes, but updated to reflect the way Francesco cooks today or, as he puts it, Mamma cooking with a chef’s hands!
The Book is easy to follow, with lots of useful tips accompanying the step-by-step recipes. The recipes all use signature regional ingredients (readily sourced in the UK) including, of course, excellent Extra Virgin Olive Oil, which Francesco uses for everything from frying and roasting to marinades.
